Brewery Notes: The Shindo family have been influential in Yonezawa City in Yamagata prefecture for over 300 years. Shindo - San the head Toji (sake brewer) is the 10th generation brewer in his family. This region is surrounded by the Azuma mountains which receive heavy snowfall yearly and melts to some of the purest water in Japan.
Quality Grade: Daiginjo
Semibaui: 50% (50% of rice grain polished away)
Taste: This sake has intense aromatics of flowers and tropical fruits. The palate is ripe and easy to drink, with light notes of vanilla. It is fantastic on its own or with lighter foods like crudo, raw oysters and cooked shellfish. Its alcohol content is also lower than many wines.
